It actually comes from a plant called Smallage or “wild celery.” Once the seed becomes ripe, which you can tell by the dark color of the seed, it can be harvested from the smallage plant. The seeds are then dried, and will turn a light brown or tan color, and can be kept whole, or crushed into a powder. This spice is most commonly used to season soups, pickling foods, and added to flavor mayonnaise-based dressings. It can also be used to season meat and vegetarian dishes. Celery seed has a similar smell to grass or hay and has a highly concentrated celery taste.
